Need info on Valencia Cuisine

Hello guys, can you please suggest a few genuine Valencia dishes?  If a visitor is curious about Valencia, what dishes should he try?

Hi,
You would have to start off with a paella it doesnt get any more valencian than that it is a rice dish with chicken and rabbit along with some beans, Also there are seafood paellas that are very nice .
If you are looking for nice breadrolls try a chivito ( chibito ) it has pork, bacon, lettuce, tomato, cheese and egg its the closest thing I can find to junk food if you are that way inclined or a brascata it has cooked jamon caramelised onions and a what you would call a minute steak.
You should also try pulpo gallego witch is very nice (octopus on potatoes )
A very nice home cooked meal is a 2 course dish called cocido    ( cothido ) you basically throw a bunch of very roughly chopped veges and meat into a big pot and boil the shit out of it for 3,4,5 hours and then you use the broth to make a soup with rice and then all the meat and veges you have for a second plate its awsome.
You will find that during the week most bars have a lunch time special that you will pay anywhere from about 7 euros to 15 euros for a three course feed. generally they always have paella there.
