Hello Pricilla my name is Baronet Kevin Parr.I am English and living here in Latvia building my house and gardens in rural bliss. I came to live here with my Latvian girlfrend some three years ago to find property and we did. I had two holiday here before that so I had an Idea of the place.My favourite food that is Latvian is Pelmini.Bits of meat in a pastry case boiled and on the plate cream and mustard is the choice. It is really Chinese dumpling pastry and I even had sweet and sour sauce on this dish. I make meals from all over the world in the kitchens I have built n this house.If I had Euro for every meal I have made I would be a multi millionare by now. I have been all over europe on holidays and cooked n some amazing places for many people I have met on my way. A nice recipe is my chocolate sponge cake.
You will need,two cups of white sugar.          1 tsp of baking soda,
2 cups of sifted plain flour,                              FOR TOPPING, 2 TSP vanilla pod
three quarters of cup of coco powder,            three qaurter cup of butter some more coco powder and one cup of
Salt                                                               cream                                                                                                                                                 grease the tins well first                                                          Bake at 180 for about forty minutes but keep and eye of things. Then when
I and a half tsp of baking powder,             cooked and cooled spread the topping on top and between that                                                                                                                                                  sandwiched                                                                                                 base  and top hen cut and serve.Enjoy.

I can't get enough of the cold beetroot soup (forget the name). In fact I didn't even like beetroot until I tried the soup, now I can't eat out without having a bowl of it for starter 😀

To be honest though I find the cuisine in general to be a little bland. And my taste buds still have trouble getting to grips with copious amount of fennel they put in everything!

Dear Joe, that soup with beetroot could one of many.Latvia has the taste for beetroot. One recipe for summer cold beet soup using beetroot and Kvass( which is a sort malt lemonade). Another recipe uses Kafeer (fermented milk) Another is Okroshka  and you may have had Borshch. This is served hot using beetroot and herbs, beef juices cucumber, and lots of many ingrediants depending on the cook. The Russian version has sour cream in it. I hope that helps. I like you hated beetroots as a boy in English public schools it was served cold in thick blooded slices next to ice cold fatty bacon with grey hard lumps in the potato mash. I baulked at beetroot in Riga hotel.I came to like the Borshch very much and now enjoy cold summer beetroot soup that my wife makes that tastes like good red wine served with a great dash of sour cream. I came to live near Liepupe about 56 miles from Riga where my Latvian wife was from.We are building a house and gardens on six acre fields. We are about half completed on house as yet but landscaped gardens was my job and here have excelled. Next thing before winter the bathroom and then we are on the home run.I made a Victorain kitchen down stairs where I cook a lot. All things modern hiden but used. We hope you enjoyed Latvia as some twenty odd families from Yorkshire and Humberside have dained to move here near us. I speak little Latvia but find English is understood here.So is Swedish,German,Russian too.Cleaver nation with languages are the Latvians. Best computer specialist ever from the age of 10 can repair a computer attacked by close down melted virus.I know from fact.My recipe went to peices and do not usea cup of salt as suggested by the mix up in that last reply.If you wish I send it over again.
