Hi Christine..
Well here some of what you can do in Cairo ..
-Enjoying a night at Khan el Khalili & El-Hussein a lot specially in Ramadan, take some friends and go.
-You can aso enjoy a River Nile Dinner Cruise.
-You can go to sound and light show at the Giza Pyramids.
-Tour of old Cairo.
-Cairo Citadel.
All activities like diving or snorkelling, adventure tours and safari are in Sharm el-Sheikh- Red Sea
but you can still enjoy a day-use at any 5 stars hotel or join a sporting club like Wadi Degla Club At Maadi

It depends what you desire :
if partying and dancing : you have many places like Tio , riverside , graffiti , L'aberigen,Obar,cairo jazz club ,sky bar and tabla
if old style and Oriental stuff : khan el khalil , El hussein ,Ghoria and Moaz el din st .
And also the pyramids area but i prefer it at mornings
if just sitting in a cool place whether drinking coffee or just smoking hookah : rooftop , P.S , pottery , wel3a & Borio's
If just going out to malls and also sitting in café
Mall of arabia , cairo festival city , porto cairo , Galleria 40 , Americana plaza & Arkan
