Tamales! I love tamales but there is lots of good food here. I am lucky that one of my best friends used to have a restaurant and she has taught me some of her recipes. I've written about a few things http://blog.thepanamaadventure.com/category/food/

Local cuisine and show, the best one is LAS TINAJAS and if you want to have more variety of food but without the show there's EL TRAPICHE

Good fresh Ceviche at Mercado de Mariscos.
Or fresh fried fish at Veracruz beach.

Personally, I don't like Trapiche or Las Tinajas. Very expensive, it's made for tourists.
If you want to eat typical "snacks", buy empanadas, chorizo and carne frita from a little car, parking at the street. The best adivse is to buy, where the locals buy, so it can't be that bad...
