for "2. serf head/horns" I would try to start by asking at places like Valley of Ferney, Domaine des 7 Vallées, Casela, and some other big parks/domaine. I ate serf at Domaine des 7 Vallées once so I suppose they might be having what you are looking for. In case they can't help you, try to get from them infos for hunting grounds or persons that hunt on their grounds. With some contacts and connections you should get it, and maybe they also have some old guns!
