Hi Amy, you might have some luck at some of these stores that specialize in western products and specialty items:

Annam Gourmet on Hai Ba Trung D1 - http://www.annam-gourmet.com/

Veggy's at the corner of Le Thanh Ton and Thai Van Lung in D1.

Annam Gourmet is a really nice supermarket selling hard to find products. Right next to Phuong Ha, at address 60 Ham Nghi is another store just like Phuong Ha; they compete with each other, selling pretty much the same types of foods. You might want to check out both of them if you go there. These are the places I go to when I need to get my western fix on. You might want to try Metro too. It's a large warehouse type store (think Costco or BJ's back home) but it might be a little far from you.

Those are just some of the places off the top of my head. I'll add some more if they come to mind

quinoa, flax seeds: Annam market.
spinach:  http://www.organikvn.com/contents/en-ca/d469.html. Be aware, they are running out of spinach quickly.
cottage cheese, Greek yogurt: I thought I saw them in Maximark but am not sure.
safflower oil: wouldn't surprise me that Annam has it as well.
There is an Annam market down in D7 where you live.

concerning spinach, there are different types. The most common type: Vietnamese spinach (Malabar spinach) is called rau mồng tơi. You find this in most supermarkets.

Regular spinach is called cải bó xôi or rau chân vịt. It can also be found in some supermarkets sometime. I some time find it in VGFOOD: 176 Hai Bà Trưng, D1.

Organik is the best source (but also the most expensive).

Sorry, don't pay much attention to the dish they serve at the restaurants, so don't know the cranberry spinach salad. Cai Bo xoi = rau chan vit (literally means duck's feet). The first name is used more frequently.

I bough Quinoa 3 days ago at one of the 2 small grocery stores (right next to each other and in fierce competition).

These are just along from the Cafe Nhu Lan which is across the road (Ho Tung Mao) from the biggest new building in HCM. The one with the Helicopter pad on the side (Bitexo), not far from the river and ferry to Vung Tau.

Find the cafe Nhu Lan (A local place, Stainless steel benches, and sort of stall wrapped around it serving meats, Bahn Mi, juices, bakery etc.) Walk past the cafe around the corner away from Ho Tung Mao toward Pastuer, (and the big building) and you will find the 2 shops within 20m on the same side of the big street (right side).

They have a load of foreign/imported goods at good prices (for HCM).
