its not visit visa it is work visa

Visa place/embassy is mentioned on the work visa. so you have get it stamp from only the mention one,

Do you see any issue with Visa Stamping being done from Delhi instead of Mumbai.Technically, it should take the same time and effort irrespective of the location. I don't think it should matter to you.
