My wife and I are considering a move from Australia to Thailand and will visit for 2 weeks from Dec 20th.

You need more than 2 weeks to make a move like that. I came to Thailand every year for a month for 10 years, and I have in-laws in Thailand, it still didn't prepare me for the concept of living here, now am looking for somewhere else to live, but not to far away, because of the realitives. It will take 6 months at least to make the right decision. Good luck.
