I love the Guatemalan Chiltepe.. it is one of my favorite chile ... It is very small and I prefer the redish ones than the green ones. There are several recipes like this one from Hacienda Real but I prefer mine.. Which consist in like 10 chiles, little onions chopped, garlic, cilantro,
I put all this in a mortar and squeeze all of it.. Then I drop a spoon of lemon into the bowl and then a drop of hot water.. You will be blast by the smell of the flavors...
