How much to move?

As my husband and I prepare to move to Honduras, what would you suggest we pack and ship/bring?

For example, we could pack up all our winter stuff and keep it here for when we visit for Christmas.  We're selling most of our furniture because a furnished apartment is provided.  But we plan to stay for 2 years.  I would love to be able to pack away most of our stuff for storage and try going down with a few checked bags and carry-ons.  But that would exclude kitchen items and sheets and other things from coming with us.

What would you consider bringing from the States and what would you buy in Honduras? 

And, How would you suggest getting things from the States to Honduras?
