Please help, I hold a South African licence which i'd like to convert to a Saudi licence. Do I need to take the test, or can they just switch it like they do with the American and British licences.

Yup, a friend of mine from south africa too went to Dallah and they had his driving licence translated and got his license on the same day. But he was accompanied by a Pakistani whom could speak arabic and helped him out.
So if you can speak arabic, that won't be a problem.
